Southern Cream Corn

Being raised in the south corn was served at almost every meal.  Grits for breakfast.  And at lunch and dinner (supper) it was corn on the cob, cut off the cob kernel corn, cornbread, not to mention casseroles, the list goes on.  I loved them all but cream style corn was definitely one of my favorites. Why? Well, maybe it was because it was only served at Grandma’s house. My mom either didn’t know how or most likely with 4 kids didn’t have the time it takes to cut it off the cob and scrape all the corn goodness from the cob.  To this day it is still one of my favorites.

Some people add cream or even onions and peppers.  Me? I’m a traditionalist, add salt, pepper, and a dollop of butter.  Just like Grandma ❤️.
